Pumpkin Bars

Fall is one of my favorite times of the year because of the food. I love anything pumpkin or pumpkin spice. These pumpkin bars are a delicious and easy dessert to make for any fall occasion!

Ingredients for pumpkin bars:

1 16oz can of pumpkin OR 2 ½ cups of mashed fresh pumpkin

1 cup of vegetable oil

4 eggs

2 cups of sugar

2 cups of flour

2 tsp baking powder

1 tsp baking soda

1 tsp cinnamon

1 tsp nutmeg

½ tsp salt

½ tsp ground cloves

OPTIONAL ~ ½ cup of chopped nuts AND/OR ½ cup raisins



Ingredients for the frosting:img_4155-1

2 cups powdered sugar

1/3 cup softened butter

3 ounces of softened cream cheese

1 tbsp of milk

1 tsp vanilla


First, preheat the over to 350º. Then, start by adding the pumpkin, vegetable oil, eggs, and sugar to a mixer. Mix these ingredients until thoroughly combined.img_4134-1

Then add the flour, baking powder, baking soda, cinnamon, nutmeg, salt, and ground cloves to the mixer. Combine until thoroughly mixed.


Once combined, you can add the chopped nuts and/or raisins by gentling mixing them in. Now that the batter is complete, grease a 15x10x1 pan (cookie sheet) and pour the batter into the pan.img_4298-1

Place in oven and bake for 25-30 minutes or until a toothpick comes out cleanly. To do this, you pull the sheet out of the oven, and place a toothpick in the center of the pan and see if the batter has cooked all the way through.

Now, set aside the tray to cool and begin making the frosting. Combine all of the ingredients at the same time into a mixer with a whisk attachment and blend until fluffy.

Once the pumpkin bars are cooled, you can gently spread the frosting on top of them.



Then, they are ready to eat or can be placed in the refrigerator for later.
