This recipe is for tahini. This will be used in another recipe in order to make homemade hummus.
1 cup sesame seeds
3 to 4 tablespoons canola or light olive oil
Pinch of salt
First, toast the sesame seeds by adding them to a wide, dry saucepan over medium to low hear. Toast the seeds by stirring constantly until they become fragrant and very lightly colored (not brown). Usually, this will take 3 to 5 minutes. Then, transfer the toasted seeds to a baking sheet or large plate to let them cool completely
To make the paste, add sesame seeds to the bowl of a food processor then process until a crumbly paste forms; usually about 1 minute.
Add 3 tablespoons of the oil then process for 2 to 3 minutes. Scrape the bottom and sides of the food processor during the 2 to 3 minutes. The consistency should be smooth, not gritty. If it is not smooth, add an additional tablespoon of oil. Add salt to taste and process for 5 to 10 seconds to mix it in.
If storing the tahini, refrigerate in a covered container. It will last for one month. Stir before using.
